Composting tips and tricks

I'm finally getting serious about composting at home and would love to hear what works for you all. Hot compost vs. cold? Bins vs. piles? What's your carbon source?

I've been collecting coffee grounds from a local shop, which is working great for nitrogen, but my carbon game is weak.
